Mom’s Salsa Meatloaf: We’ve tried it, we like it!

This is a bit of a throwback recipe to a time of rich, filling comfort food for a cold winter (or spring?) night.
It’s also a recipe that you’ll be able to tinker with endlessly to get the seasoning just the way you like it best. We even add a few food hacks at the end of the recipe to give you some ideas…
Mom’s Salsa MeatLoaf
2 lbs. extra lean ground beef
1 cup Mom’s Homemade Salsa
1/2 teaspoon onion salt
1/2 cup dry bread crumbs
2 eggs
1/8 tspn. freshly cracked black pepper
4 slices of ham (cut thicker than sandwich width, but flexible enough to roll)
6 to 8 thin slices of sharp cheddar cheese (or about 1 1/2 to 2 cups roughly shredded)

Mix the first 6 ingredients together well in a large bowl. Flatten into a rectangle on wax paper. Place the ham and cheese on top to within an inch of all four sides. Roll and place in the pan. Top with the Salsa.

Bake at 350 for 65 – 70 minutes. Sprinkle with some extra cheese and place back in the oven for 1 minute to allow it to melt.
Now for the fun part…
Make this recipe your own … the ways you can vary the taste of this meatloaf are probably endless, but here are a few of our favourites to get you started:
* Substitute Italian style seasoned bread crumbs.
* Substitute a half package of onion soup mix for the onion salt.
* Instead of cheddar, try mozzarrella cheese for a creamier, smoother texture.
